Matt’s Healthy Chicken Tortilla Soup

Ingredients: 1 lb Organic chicken thighs (you can also use leftover chicken from a roasted chicken the night before)

1 can of organic black beans

1 can of organic diced tomatoes

1 can of organic green chilies

2 cartons of organic chicken broth

4 cloves of organice garlic minced

1 red, yellow or white organic onion diced

Juice of 1 Organic lemon

2 tablespoons chili powder

1 tabelspoon cumin

1-2 organic jalapenos diced (depending on how spicy you want it, you can also skip it)

salt and pepper to taste

Healthy Toppings-

Chopped organic cilantro

Sliced or cubed organic avocado

Your favorite hot sauce

Not so healthy toppings-

Organic Sour cream

Organic Pepper jack or cheddar cheese

OrganicTortilla chips

Cook for 6-8 hours on high in crock pot/slow cooker or set for 7 minutes in a pressure cooker. Pull out chicken and shred it with a fork than return to the soup you can also do this in the pot if it’s not too hot. Serve in a bowl. Don’t forget some toppings!! Enjoy!

If you don’t already have a pressure cooker I highly recommend one. They are digital and very safe, and can release pressure slowly by itself if you choose. You can start a meal when you get home and it will be ready by the time you help your kids finish their homework or get some chores done.
